Also, this topic reminds me of Planescape Torment: its main character was called the Nameless One. Which is a name as well, at the same time it's not. Entire story was built around this guy.

Yeah, I took 'Risk' and changed the map to Tolkin's Middle Earth, added towers to certain fields to increase strategic options for players. Played it once or twice. Got bored with it then. It was a lot of work and comparatively little fun.
Elves would due to their immortality probably view themselves as closer to the Gods, would they not?
From that point of view humans would just be some temporary nuisance.

Concerning writing what comes to mind is outlining.
Some people don't like to outline. And it isn't necessary to outline a story. But it can be helpfull in these situations. It will give you a better sense of where the story or project is going.
And perhaps it could help...
Technically humans and dwarves and elves and such would be considered different species. And then within the same species you can differentiate between races, eg dark-elves, moon-elves, high-elves and so on.
But I agree that non-humans would probably consider the term 'demi-human' as negative...
