I just found this one. It's the Book of Trades, by J. Amman, made in the sixteenth century. Plenty of woodcuts of the various trades. Just search on "book of trades amman" and you'll be in.
While on the subject, for a later but equally evocative set of images, turn to L'Encyclopedie. The one published by Diderot. The engravings are better, but the time period is firmly 18thc. Search string: diderot encyclopedie.
