Here's a curious one, perhaps pantsing taken too far.

I got my main characters intoo a tattoo parlor, got the tatto parlor OK, but- I need the owner, the artist, who will be an important character. But I hadn't met this person yet. I had no idea who he or she was. I needed a tattoo artist!
So here I was, in wartime, in the the National Library coffee shop, and I need a character. I stare at a girl at the next table. Maybe I can use her? She asked me if I wanted something. I was going to say "yes, can I copy your soul for my novel?" But I decided she wasn't right. Too normal looking. So I said "no, just thinking". I got up, and walked around, looking for inspiration.
Inspiration came, I found the character- but it was no one in the room. Too many normal people in a library. Or normal looking anyhow. I look normal too.
 
Pants are great, they're comfy and easy to wear! (If you know you know)

I tend to come up with my characters at random, I've been tryina be better about planning the actual story out.
But being a pantser for characters is fun and I've gotten some great characters out of it.
 
Great! Not a weird request at all... :)

But actually, the line "can I copy your soul?" has got me thinking...
I'm reminded of a time at the doctors office. I was like 17 or 18
I didn't ask the nurse directly but my gears were turning.
My mom caught me kinda blankly staring and said 'he's inventing a character'
And I didn't say anything out loud but I was like 'no? but...actually wait...' lol Later my brain came up with a random nurse character haha.

While I do enjoy studying people, I never thought to invent a character in quite that way. I dont mind plain looking, most plain looking people are still quite attractive. But I could see feeling the same as you. Yes, I would like to memorize your face and shape, and learn your soul... That would probably put me on the creepy side of the scale, so I just avoid eye contact ;)

You can take plain and add details to embellish.

While I have an image of most of my characters, I think most of them look plain. Many of them are scarred and took debilitating injuries over the course of the story. I am not sure they would hit any desirable list.

If you think normal people watching is creepy (I swear this is relevant to your comment) wait until/if you meet a character in Fire Emblem Engage.
Not only is his people watching actually creepy, but his reason for doing it is (Slightly) creepy as well, and despite main character trying to convince him to ease up on it or at least 'pull in the reigns' he says something like 'I respect your wishes but this is my passion!' (Paraphrasing as I forget the exact wording) and trust me a LOT of fans hate him for this reason. It'd be one thing if he had a change of heart at one point? But he kinda doesn't.

Thankfully he's the only character in the game with this kind of quirk.
